If you didn’t know already, maple syrup varies in color, texture, and sweetness. That’s why it is classified into four different grades: Golden, Amber, Dark, and Very Dark. Continue reading to learn what each maple syrup grade means.

Golden

As the name suggests, this is the lightest grade of the maple syrup family and has the most delicate flavor. The golden quality of the maple syrup is often created by the first sap flow of the season and is perfect for those who don't prefer a more pungent taste. It’s ideal for everyday use on pancakes, waffles, oatmeal, or French toast.

Amber

A slightly darker version of the golden grade maple syrup, the amber version has a medium intensity of the maple flavor and is usually preferred for its normalcy and rich flavor. The best time to collect sap for this kind of grade is during the second or third runs when temperatures are warmer during sunny days and colder at night.

Dark

Moving one step further, the dark grade of the maple syrup brings a more pronounced and intense flavor for its consumers. Not just dark in its name, this grade is also darker in color and intensifies any edible it is paired up with. It’s best used as an ingredient in cooking or baking rather than served on top of traditional breakfast items like pancakes, waffles, and French toast.

Very Dark

The darkest grade in the quality of maple syrup is most preferred by those who like strong and intense flavors. It also suits well in other cooking processes and doesn't lose its flavor quickly. The best time to collect sap for this grade is during the last few days of the sugaring season when the temperature is below freezing at night but above freezing during the day.
